Vinny's life in food began at a very young age making tamales and posole with him mother. As the youngest of 5 children, he always found himself slaving away in the kitchen. Little did he know where his life would lead. Coming from a working class family, he had to start working fairly early in life. This meant food service. Sounds sort of grueling, but he loved it and every job he had he rose to the top. Starting from hotels such as Wyndham Garden and moving from line cook position to being the saucier and off-site catering manager for Spago Chicago.
Vinny always proved himself to be a dedicated and very strong leader. Having
met Michelle at a very young age, they lived their lives and their jobs together,
moving with each other, being inspired by each other's creations.
The final creation was Bleeding Heart, where Vinny found and has been honing
his skills as a specialty cake decorator for the past 6 years.
Leaving his life in savory food behind was difficult, but it is obvious he
has found his bliss.
