Nut Allergies
Our kitchen is NOT a nut free environment, however, we are perfectly fine
with sanitizing all necessary equipment to make a nut free cake, and we
just can’t label it as such. Once the product is made, we will keep
it away from anything “nutty”. However, we are not liable if
an allergy reaction occurs as we are clearly stating that although we will
do everything in our power to make your item nut free, we are not a certified
nut free establishment.
Gluten Allergies
Due to the high amount of gluten naturally in the air at Bleeding Heart,
we cannot certify anything as Gluten Free. However, just as with the nut
allergy, we will do everything in our power to insure that there is no cross
contamination. One way we combat this it to buy pre-mixed gluten free flours.
This way we do not have to have the flours in the elements of the kitchen
for very long. However, this means that we cannot make a sugar free gluten
free cake because the sugar is mixed in and cannot be taken out. Vegan and
Gluten Free is just fine.
Sugar Free
Although the term “sugar free” is used for what we do, the actual
term would be “low glycemic index”. We do not use chemical sweeteners
and will not, under any circumstance, allow them in the bakery. We replace
sugar with Agave nectar in all recipes ordered sugar free, but not everything
can be made this way and a baker will be the final judge. Vegan and sugar
free is not available, especially for frosting as cream cheese is the base.
